1/2 cup whole wheat flour
1/2 cup old-fashioned rolled oats
1/2 tsp baking powder
1/8 tsp ground nutmeg
1/4 tsp salt
1/4 cup maple syrup
1/4 cup canola oil
2 eggs, beaten
14 cup unsweetened shredded coconut
1/3 cup grated carrots
1/4 cup walnuts, chopped
1/4 cup dried cranberries

Preheat oven to 350º. Line two rimmed baking sheets with parchment paper and set aside.

Combine the flour, oats, baking powder, nutmeg, and salt in the bowl of a stand mixer outfitted with the paddle attachment. Mix until well blended.
In a mixing bowl, combine the maple syrup, canola oil, eggs, coconut, grated carrots, walnuts and cranberries. Stir to blend.
With the mixer running on low, add the maple syrup mixture to the dry ingredients in a slow stream. Increase the speed to medium and mix until a batter forms.

Drop the cookie dough by heaping teaspoons onto the prepared cookie sheets, leaving about 2 inches between cookies.
Transfer to the oven and bake until the cookies begin to turn brown around the edges, about 10--12 minutes.
Leave cookies on the baking sheet until completely cool and firm to the touch.
Serve immediately.
Store in an airtight containr in the refrigerator.
