Vegetable cooking spray
1/2 cup prune puree [recipe below]
1/2 cup frozen apple juice concentrate, thawed
3 T canola oil
1 T vanlla
1 cup brown sugar
1/4 cup finely ground almonds
3¼ cup whole-wheat flour
1 tsp baking soda
1/2 tsp salt
1/4 cup hot water
Raspberry no-sugar fruit spread

Directions:

Preheat oven to 350º. Coat baking sheets with vegetable cooking spray; set aside.
In a mixer bowl, combine puree, apple juice concentrate, canola oil and vanilla; beat to blend thoroughly.
Add sugar and almonds; mix completely.
Sift together flour, soda and salt; stir into prune mixture with hot water just to blend thoroughly.
With hands dipped in water to prevent sticking, roll dough into 1 inch balls; place spaced apart on prepared baking sheet. Flatten with the palm of your hand.
With the tip of your thumb, make an indention in the center of each cookie.
Place fruit spread in a small bowl, whisk slightly.
Spoon about 1/2 tsp spread into each indention.
Bake for 15 minutes or until golden.
Cool on racks.

Prune Puree:
2⅔ cups [1 pound] pitted prunes
3/4 cup water
Combine prunes and water in container of food processor, process about 1 minute until pureed.
Puree may be covered and refrigerated up to 2 months. Makes 2 cups.

Even if you don't like prunes - you will [might] like these!
