1/2 cup unsalted butter, room temperature
1 cup granulated sugar
1 cup firmly packed light brown sugar
1/2 cup almond paste
2 T vanilla
2 large eggs
3½ cups all-purpose flour
1 tsp kosher salt
2 tsp baking soda
1 cup white chocolate chips
1 cup coarsely chopped dried apricots

Directions:

Preheat oven to 350º. Line a baking sheet with parchment paper.
In a large bowl, cream togethr the butter, granulated sugar, brown sugar, almond paste and vanilla on medium speed until smooth.
Add the eggs one at a time, scraping down the bowl and paddle after each addition.
Once the eggs are well incorporated, add the flour, salt baking soda, white chocolate and apricots.
Mix on low speed until combined. The dough shouldn't be too sticky.

Use a 1/2 cup measure or 4 oz ice cream scoop to scoop portions of the dough and place them about 2 inches apart on the prepared baking sheet.
Lightly flatten the cookies with your palm.
Bake for 14 minutes or until golden brown around the sides and still pale in the center.
Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
