20 tbsp. Unsalted butter, softened
½ c. Unsweetened cocoa powder
1 tsp. Instant espresso powder
1 c. Sugar
¼ tsp. Salt
2 Large egg yolks
1 tbsp. Vanilla extract
2 ¼ c. All-purpose flour
14 oz. Soft caramels
¼ c. Heavy cream
½ tsp. Flake sea salt

1. Combine 4 tablespoons butter, cocoa, and espresso powder in small saucepan; stir over medium heat until mixture forms smooth paste, 2 to 3 minutes. Let paste cool for 15 minutes. Using stand mixer fitted with paddle, beat remaining 16 tablespoons butter, sugar, salt, and cocoa mixture on medium-high speed until fluffy, mix until combined. Reduce speed to low, add flour in 3 additions, and mix until cohesive dough forms. Divide dough in half, form each half into disk, wrap disks in plastic wrap, and refrigerate for 1 hour.

2. Adjust oven racks to upper-middle and lower-middle positions and heat oven to 375º F. Line 2 baking sheets with parchment paper. Roll 1 disk of dough 3/16 inch thick. Using 2 ½ inch router cutter, cut dough into rounds, gathering and rerolling scraps once; space rounds evenly on 10 to 12 minutes, switching and rotating sheets halfway through baking. Let cookies cool on sheets for 5 minutes, then thranfer to wire rack. Repeat with remaining disk of dough. Let cookies cool completely.

3. Heat caramels and heavy cream in medium saucepan over medium-low heat, stirring until combined. Spread each cookies iwht heaping teaspoon caramel, sprinkle with sea salt, and let caramel set for at least 30 minutes before serving.
