3 C rolled oats (not instant)

3 Tbsp packed light brown sugar

½ Tsp ground cinnamon

¼ Tsp kosher salt

⅓ C honey

¼ C vegetable oil

1 Tsp Vanilla extract

½ C small-diced dried fruits (optional)

½ C coarsely chopped raw or toasted nuts or seeds

Heat oven to 400º F, Arrange rack in middle

Place oats, brown sugar, cinnamon, and salt in large bowl and mix till combined; set aside

Place honey, oil, and vanilla in small bowl and stir till combined, pour over oats mixture and mix till fully coated

Spread mixture in a thin, even layer on a rimmed baking sheet

Bake 15 minutes, then stir and continue baking until the granola is a light golden brown about 5 to 15 minutes.

Place baking sheet on a wire rack and cool until room temp, stir occasionally (note; it will harden as it cools)

Add fruits, nuts, and/or seeds to baking sheet and toss to combine

Store up to two weeks

My Nanna makes this every time we visit. I eat it like cereal everyday when we're in Ohio. She always sends us home with at least two batches to last us the entire trip back. I always try to get her to mail me some between visits.
