4-6 ripe bananas
2/3 CUP melted butter/margarine
2 tsp Baking Soda
Pinch salt
1/2 CUP Brown Sugar
2 Large eggs
2 tsp Vanilla
3 CUPS Flour

Directions:
Directions:
Preheat oven to 350º.

Grease and flour two loaf pans.

In medium mixing bowl mash banana well. Stir in butter. Mix in Baking soda and salt. Stir in sugar, egg and vanilla. Mix in flour well. Bake for 50-60 minutes or until wooden toothpick inserted in middle comes out clean.

Remove from oven and let cool for five minutes. Invert on to baking rack or other flat surface until completely cooled.

Slice, spread with butter and enjoy.

To freeze, wrap in waxed paper or plastic wrap and keep in ziploc bag. Freezes well.

I remember coming home from school and smelling banana bread as I walked in the door. Nothing was better than warm banana bread with lots of butter melting on it.
