1 cup unsalted butter
2 c flour
3/4 tsp baking powder
1 pinch of salt
1 large egg yolk
3/4 c sugar
1 TB:L vanilla
1/4 ro 1/3 cup jam, berry, plum or cloudberry
powdered sugar for dusting

Melt butter in small heavy bottom saucepan over med.
continue to cook swirling pan occasionally, until butter browns lightly and smells nutty, about 15 mins. Transfer to med bowl, be sure to get every tasty brown bit.
Meanwhile, whisk flour baking powder and salt in another bowl...
Whisk the egg yolk, sugar and vanilla into cooled browned butter.
Stir in dry ingrediants to make uniform but crumbly dough that looks like wet sand.
Scoop out dough with teaspoon, the kind you set table with. Rock spoon back and forth against inside of bowl , packing the dough into the spoon, slide out onto baking sheet, try to have even number of cookies since they sandwich together.
Bake cookies until brown, about 12 to 15 mins. Transfer to cool, spread 1/2 tsp on jam on flat side and sandwich another to it, lightly dust with powdered sugar.
You can freeze baked cookie halves wrapped tightly in plastic wrap and then foil, for 2 weeks. After making, dont store with crisp cookies as jam will soften other crisp cookies.
