1 lb. lean boneless chicken
1 can Italian Seasoned Bread Crumbs
1 Egg - beaten
3 T. Olive or Canola oil
2 cans Sliced Mushrooms with water mushrooms are in
1 12-16 oz. grated mozzarella cheese

Directions:
Directions:
Clean and slice chicken into bite size pieces. Pat with paper towels to dry.
Dip Chicken pieces into beaten egg and roll in bread crumbs

In a skillet, heat oil and add chicken. Brown chicken until golden brown. Remove from skillet and drain on paper towels. Continue browning until all chicken is cooked.

Place cooked chicken back in skillet with a couple T. oil. Add 2 cans of mushrooms along with the liquid they came in.
Cover the chicken with mozzarella cheese and cover.

Heat until cheese is melted and serve immediately.

For larger quantities you can use a 13 x 9" baking dish, cover and heat in oven until cheese is melted.
