1 Crusty Loaf of bread, preferably sourdough or Vienna (already baked bread, not raw dough)
3/4 cup shredded Mozzarella cheese (or your favorite melting cheese)

GARLIC BUTTER

7 tbsp. unsalted butter, softened
2 large garlic cloves, minced
3/4 tsp salt
1 tbsp. fresh parsley

Pre-heat oven to 350º

Combine butter, garlic, and salt in a microwave proof bowl and melt in the microwave.
Add parsley and stir thoroughly.

Cut the bread, on a diagonal, into 1" diamonds, be careful not to cut all the way through the bread.

Use your finger or a knife to pry open each crack and drizzle in a teaspoon of butter and a pinch of cheese. Any leftover butter drizzle over the crust.

Wrap in foil and bake for 15 minutes until the cheese is mostly melted. Then unwrap and bake for 5 minutes longer to make the bread nice and crusty.

Unwrap and serve immediately. Good alone or with dipping sauce, like a marinara sauce.

Can be made ahead and wrapped in foil and the cling wrap. Store in the fridge over night or freeze. Need to thaw before following baking directions.
