2 pkgs of chopped spinach, fresh...I use frozen
4 T butter
1 cup chopped onion
1 T minced garlic
1/4 tsp cayenne
1/4 c flour
1 c milk
1 c heavy cream
2 tsp lemon jce
1 cup 1/2 inch cubed brie cheese
1 cup gruyere cheese
1 6 oz chopped marinated artichokes, drained
1/4 c shredded parm.
Tortilla chips or pita chips

if using fresh spinach, wilt in a bit of boiling water, squeeze dry
in skillet, melt butter, add onions cook 3 mins, add garlic, cayenne, cook another minute. add the flour and cook to make a light roux. Add milk and cream, cook stirring constantly. until thick and creamy. add spinach and lemon jce. Stir. Add the cheeses artichoke stir well. Remove from heat, pour into a baking dish, top with parm. bake until bubbly about 10 mins. Serve with chips
