1 (1¼ lb) piece skin on salmon
¼ tsp salt, pepper
2 tbsp. whole grain dijon mustard
2 tbsp honey
1 tbsp extra virgin olive oil
2 lemon, cut in half
6-8 sprigs fresh thyme (optional)

Directions:
Directions:
Preheat oven to 450º. Line a baking sheet with foil. Arrange salmon, skin side down, on prepared pan. Sprinkle with salt and pepper. In a small bowl, whisk together mustard, honey and olive oil. Pour over salmon. Cut 1 half of lemon into thin slices, reserve remaining half for squeezing over salmon. Place lemon slices and thyme sprigs on top of salmon. Bake 10-12 minutes, until just cooked through. Remove from oven and squeeze remaining lemon over top.
