1 ¼ cups of vegetable oil
1 ½ cups of sugar
4 eggs
1 can (398 ml) del monte crushed pineapple juice, well drained, reserving ¼ cup of juice
2 ½ cups of all purpose flour
2 tsp of magic baking powder
½ tsp of salt
1 tsp of baking soda
1 ½ tsp of cinnamon
½ tsp of ground cloves
½ tsp of ground nutmeg
2 cups of grated raw carrots
1 cup of nabisco 100% bran cereal
½ cup of chopped nuts

Directions:
Directions:
PREHEAT oven to 350º F. Grease 13 x 9-inch pan with butter.
BLEND together vegetable oil and sugar; add eggs, one at a time,beating well after each addition; stir in pineapple juice.
COMBINE flour, baking powder, salt, baking soda and spices; gradually add to cream mixture beating until well combined.
STIR in carrots, cereal, crushed pineapple and nuts.
POUR into pan. BAKE in oven for 50-60 minutes or until a toothpick inserted in the centre comes out clean.
COOL pan for 15 minutes; invert onto wire rack to cool completely.
