For the Caramelized Onions: Cooks 45-60 mins
• 2 tablespoons olive oil
• 2 yellow onions (peeled and thinly sliced)
• Kosher salt and freshly ground black pepper (to taste)

For the Turkey Patty:
• 1 1/2 pounds ground turkey
• 1 tablespoon Worcestershire sauce
• 1 tablespoon paprika
• 2 teaspoons coriander
• 2 tablespoons mint (chopped)
• 1/4 cup parsley (chopped)
• Kosher salt and freshly ground black pepper (to taste)

Spicy Feta Spread:
• 1/2 cup feta cheese (crumbled)
• 1/2 cup Greek yogurt
• 2 tablespoons olive oil
• 1/2 teaspoon red pepper flakes
• 1 lemon (zested)
• Kosher salt and freshly ground black pepper

For Serving:
• 4 thin whole wheat sandwich rounds

1--For the Caramelized Onions: Preheat a griddle over medium-high heat. Add the olive oil and onions and cook, stirring occasionally, until caramelized, about 20 minutes. Season with kosher salt and freshly ground black pepper. Divide into four even piles on the grill.

2--For the Turkey Patty: In a large bowl, combine the ground turkey, Worcestershire, paprika, coriander, mint and parsley. Divide into 4 even balls. Season with Kosher salt and freshly ground black pepper.

3--Place the balls of turkey on top of the 4 piles of caramelized onions and using a spatula press the meat down into the onions to form a patty. Cook for 5 minutes, flip and cook for an additional 5 minutes until cooked through.

4--To Serve: Flip the sandwich rounds inside out. On each side on the sandwich rounds, spread a heaping tablespoon of the spicy feta spread. Top with a patty, onion side up, and sandwich with the top sandwich round, feta spread facing down. Place on the griddle to toast the bread, about 1 minute per side. Serve immediately.

5--For the Spicy Feta Spread: In the bowl of a food processor, combine feta, Greek yogurt and olive oil. Process until smooth. Remove to a medium bowl and fold in the red pepper flakes, lemon zest and season with Kosher salt and freshly ground black pepper. Set aside until ready to use.

6--Tip: The spicy feta spread is good as a dip, as the base to a salad dressing, or to jazz up a simple sandwich. Store in an airtight container for up to 1 week!
