1 lb carrots cut into rounds
1/3 c milk
2 1/4 c flour
1 1/2 tsp cinnamon
1 1/4 tsp baking p
3/4 tsp b soda
2 cups sugar
3/4 c butter
3/4 tsp salt
3 eggs
1 T vanilla
1 c chopped walnuts
1 c coconut
8 dried apricots chopped
Orange glaze
1 cup plus 3 T powdered sugar
1/4 orange jce
2 tsp grated orange peel

Oven 350
butter and flour bundt pan
cook carrots in med pot of wather until tender. drain and place in food processor, and puree. transfer to small bowl and add milk.
In another bowl whisk flour, b powder, cinnamon b soda. In larger bowl mix sugar butter and salt, then add eggs 1 at a time. Beat in vanilla. Beat in flour mixture alternatively with carrot mixure. Fold in walnuts coconuts and apricots. Pour into bundt pan. Bake about 55 mins. cool 20 mins. and invert to wire rack.
Meanwhile whisk p sugar, juice and peel. Pour over warm cake.
