Ingredients:  
Use your own pie crust recipe, make 2 large crusts
(I use 2 boxes of Krusteaz pie crust mix.)
1 crust for the bottom and 1 for the top

Filling:
1/3 c. corn starch
8 c. fresh peaches, sliced
2 1/2 c. sugar
1 1/2 sticks unsalted butter, melted
1/2 tsp. almond extract
1 tsp. ground fresh nutmeg
1 tsp. vanilla

Grease and flour a 13 X 9 baking dish. Spread the bottom pie crust across the bottom and up the sides of the dish..

Peaches:
In a large bowl, combine sugar and corn starch, mix well sprinkle over peaches and toss. Stir in almond, vanilla, 1/4 c. melted butter, mix well. Bake bottom pie crust 10 minutes in 350º oven, remove and pour peaches on top. Take your 2nd crust and cut into strips. Preheat oven to 400º. Place strips on top of cobbler in a lattice pattern. Bake for 1 hour or until golden brown. Serve warm with ice cream.
