4 medium yellow onions, coarsely chopped
3 cloves of garlic, peeled and minced
1/4 cup cooking oil
1 tsp oregano
2 bay leaves, crushed
2 lbs ground beef (you can use ground turkey or deer burger as a substitute)
1/4 cup chili powder
2 cans diced tomatoes
3 or 4 cans pinto beans
2 tsp salt
2 tblsp vinegar
1/8-1/4 tsp crushed hot red chili peppers

Directions:
Directions:
Sautee onions and garlic in oil in a large, heavy kettle over moderate heat. Stir occasionally, 10 minutes, until onions are kind of see through. Add oregano, bay leaves and beef. Sautee, breaking up beef-for about ten minutes until beef is no longer pink. Add 2 tbsp. of chili powder, tomatoes, beans and simmer over low heat, stirring occasionally for 1 1/2 hours. Add remaining chili powder, salt, vinegar and red peppers. Simmer, stirring now and then for 15 minutes longer.

Serve hot or freeze for future use.
