2 sticks (8 oz)softened unsalted butter
½ cup granulated sugar
½ cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups plain flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt (optional)
2 cups semi sweet chocolate chips
2 cups old fashioned oats
1 cup raisins
1 cup flaked coconut ( I prefer unsweetened)
1 cup chopped walnuts

Preheat oven to 350º. Line baking/cookie sheet with parchment.
Use a large bowl, and beat together butter, granulated sugar and brown sugar until it is creamy. This takes about two minutes. You can do it by hand with a wooden spoon or with the mixer. Beat in the eggs, one at a time and make sure they are well blended. Stir in the vanilla.

Use a medium bowl, sift together flour, baking soda, baking powder and salt if used. Using a wooden spoon, stir gradually into butter mixture until blended. Add the rest of the ingredients and stir with a wooden spoon until well mixed.

Use a teaspoon or small ice-cream scoop and put batter onto parchment about 2 inches apart. Flatten the top with a spoon or bottom of a glass, so that they are even.
Bake until they are golden colour, about 16 - 18 minutes, depending on size. Allow to cool for a couple of minutes before moving to a wire rack to cool.
