6 skinned and boned chicken breast halves
3 tbsp. butter
1 c. sliced mushrooms
½ c. champagne
½ c. sour cream
¼ tsp. salt
¼ tsp. pepper

Directions:
Directions:
Cook chicken in butter in a large skillet over medium-high heat until browned on both sides. Remove chicken, reserving drippings in skillet. Add mushrooms to drippings; cook, stirring constantly, until tender. Stir in champagne.

Return chicken to skillet. Bring mixture to boil; cover, reduce heat, and simmer 20 minutes or until chicken is done.

Transfer chicken to a serving platter, reserving mushroom mixture in skillet. Add sour cream, salt, and pepper to mushroom mixture. Bring to a boil; reduce heat, and simmer, stirring constantly, 5 minutes or until mixture is thickened. Spoon mushroom mixture over chicken.
