1 C flour
3 tsp cinnamon
1/2 tsp baking powder
1/2 C brown sugar
1/2 C white sugar
1 pinch salt
1/2 C oil
2 C grated carrots
2 eggs

Directions:
Directions:
Blend all of the ingredients very well.
Spray baking pan with non- stick spray and pour the mixture in.
Bake for 25 - 30 minutes at 350°.

Icing:
Melt 1/4 C butter (lactose-free) and combine with 2 C of icing sugar, 2 Tbsp milk, and 1/2 tsp vanilla.
Spread over the cake once it is cool.

This is the first recipe I learned to master when Matt became lactose-intolerant ( it is also his favorite type of cake ).
