Ingredients:  
1 ½ lb. chicken ( cut into bite sized pieces )
½ c. chopped onion
1 or 2 garlic cloves (or 1 tbsp. for chopped garlic in a jar)
3 tbsp butter
2 chicken bouillon cubes (or 3 tbsp bottled)
1 c. hot water
½ tbsp ground cumin (optional)
2 c. half and half
2 c. monterrey jack cheese (8 oz block )
1 can cream style corn
1 can chopped green chillies
1 tbsp hot sauce
1 tomato chopped (hold for serving)

Directions:
Directions:
Cube chicken and brown with onion and garlic in butter .
Dissolve bouillon in hot water and add to chicken .
Add all other ingredients - Add half and half and cheese last.
Cook on medium high heat until cheese melts and soup is smooth
Add chopped tomato to each bowl when served.
