2 cups all purpose flour
1 Tbsp sugar
3/4 tsp salt
1/2 cup buttermilk powder
1/2 tsp baking soda
1/2 cup sour cream
2 large eggs
1/4 tsp vanilla
1/4 cup vegetable oil
1 1/4 cup unflavored seltzer water

Adjust oven rack to middle and heat oven to 250º. Set a wire rack in a rimmed baking sheet and place in the oven. Whisk flour, sugar,salt, buttermilk powder, and baking soda in a large bowl. Whisk the sour cream. eggs, vanilla and oil in a medium bowl. Gently stir in the seltzer into the wet ingredients. Make a well in the dry ingredients and pour in the wet ingredients. Using a spatula gently fold ingredients until combined. Batter should still be lumpy with streaks of flour.

Heat the waffle iron and bake waffles per manufacturers instruction. Transfer waffles to the rack in the warm oven and hold for up to 10 minutes. Serve with butter and syrup.
