2½ cups unsweetened almond milk
2 cups steel cut oats (they have to be steel cut or oat groats work too)
1 whole apple, seeds and stem removed
2 eggs
½ tsp sea salt
2 Tbsp coconut oil
1 tsp pure vanilla extract
1 small zucchini or carrot
1 tsp cinnamon
pinch of nutmeg
1 Tbsp baking powder
1 cup blueberries
½ cup crushed walnuts

Directions:
Directions:
In a high powered blender, combine the milk, oats and apple. Blend until smooth and thick. Stop the blender and add the eggs, salt, oil, vanilla, zucchini or carrot, cinnamon and nutmeg. Pulse for about 20 seconds until mixed up. Stop the blender and add baking powder and pulse again until mixed in. Stir in a cup of blueberries and crushed walnuts. Let batter rest for about 3 minutes then pour onto a hot cast iron griddle.
