1 cup creamy peanut butter
1 cup light brown sugar, packed
1 large egg
1 tablespoon vanilla extract
1 teaspoon baking soda
6 ounces semi-sweet chocolate, chopped (1 cup semi-sweet chocolate chips)

Preheat oven to 350ºF. Line baking sheets with parchment paper. Set aside. In the bowl of a stand mixer combine peanut butter, brown sugar, egg and vanilla. Beat on medium-high speed until well combined and the sugar is fully incorperated and the mixture is no longer gritty or granulated. Add the baking soda and mix until incorporated. Fold in chocolate; do not overmix or chocolate chunks will break down. Using a medium 2 inch cookie scoop, form 2 tablespoon mounds. Place mounds on a large plate, flatten slightly, cover with plastic wrap and refridgerate for at least 2 hours. Place mounds on a baking sheet (8 per sheet) and bake for 8-10 minutes. Allow cookies to cool on baking sheet for 5-10 minutes before transferring to cooking rack to finish cooling.
