Raspberry-Filled Christmas Cookie Recipe

1 cup butter, softened
1/2 cups powdered sugar
1/2 cup flour
1 teaspoon vanilla
1/2 cup walnuts or pecans, ground
1 cup seedless raspberry jam (I recommend Smuckers)

Icing: 
1 cup powdered sugar
A few drops of water
Red food coloring

Directions:
Directions:
~ Cream butter and 1/2 cup sugar. 
~ Stir in flour, vanilla, and nuts.  Mix well.
~ Roll dough into teaspoon size balls, try to make them small and an even size.
~ Put on ungreased cookie sheet.
~ Press each cookie with a glass that is dipped in water and then into REGULAR sugar.
~ Bake at 375 degrees until brown - about 8 to 10 minutes.
~ Cool. Then put small amount of jam on HALF the cookies.  ~ Now put other half of cookies on top of ones with jam, making a "sandwich".

To Make Icing:
~ Mix the 2 ingredients well.  Icing should be a little runny. 
~ Add red food coloring to make the icing a deep, pretty pink.
~ Put some icing on each cookie.  Icing will hardened.
~ These yummy cookies are finished.  Enjoy!
