1 cup solid shortening
1/2 cup butter or margarine
1 1/2 cups granulated sugar
1 cup packed brown sugar
4 eggs
1 Tablespoon vanilla
1 teaspoon lemon juice
2 teaspoons soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1/2 cup rolled oats
3 cups all-purpose flour
2 (12 ounce) pkgs. semisweet chocolate baking pieces
2 cups chopped walnuts

Directions:
Directions:
~ In a large bowl beat together on high speed the solid shortening, butter, granulated sugar, and brown sugar until thoroughly combined.
~ Then beat in the eggs, one at a time, beating well after each addition. Beat in the vanilla and lemon juice.
~ In a bowl, stir together the soda, salt, cinnamon, oats, and flour.
~ Beat dry ingredients into the creamed mixture until well combined; mix in chocolate pieces and nuts (I mix these two in with my hands).
~ For each cookie, drop a scant 1/4 cup dough on lightly greased baking sheet; make cookies about 3 inches apart.
~ Bake in a 350 degrees oven for 16-18 minutes or until golden brown (Do not overcook. They will get hard).
~ Transfer to wire racks to cool.
~ When storing these cookies, add a piece of bread; it will help keep them softer.
~ Makes about 3 dozen cookies.
