a) Butter
1/4 c. unsalted butter
2 tbsp. grain Dijon mustard

b) Sauce
1/4 c. vegetable oil
3 tbsp. cider vinegar
4 tbsp. grain Dijon mustard
2 tbsp. sugar (or to taste)
Freshly ground black pepper to taste

Method (a)
Soften the butter in a small bowl and then stir in the mustard.
Firm the butter in a serving dish in the refrigerator.

Method (b)

Place the oil in a bowl and then gradually whisk in the other ingredients.
Set the sauce aside for the flavors to combine, and then serve it from a small pouring bottle. Shake the bottle well before serving the sauce.
Serve the butter and the serving sauce with baked potatoes.
