1 3 1/2 lb. broiling chicken cut into serving pieces
flour
olive oil
1 large onion, thinly sliced
1 clove garlic, minced
1 can (16 oz.) whole tomatoes, chopped
1 bay leaf
2 tbsp. tomato paste
1/2 cup dry white wine
1 tsp. marjoram
salt
freshly ground black pepper
2 large green peppers cut in strips
1/2 lb. mushrooms, thinly sliced

Directions:

Dredge chicken in flour and brown lightly in a skillet in 2 tbsp. hot olive oil. Transfer to a large saucepan. In same skillet, brown onion and garlic in 1 tbsp. hot oil for 3 minutes. Transfer to saucepan with tomatoes, bay leaf, tomato paste, wine, marjoram, and salt and pepper to taste. Stir and simmer for 40 minutes. Sauté peppers in 3 tbsp. hot oil for 3 minutes. Add mushrooms and sauté for 5 minutes longer. Transfer to saucepan and simmer until chicken is tender; about 10 minutes. Correct seasoning if necessary. Discard bay leaf and serve over wide noodles (tagliatelle).
