1 can rinsed and drained beans (Optional)

1 tomato, chopped

1/2 cup corn

1/2 tsp. cumin

1/4 tsp. chilli powder

4 (6 oz.) boneless skinless chicken breasts

1/4 cup reduced fat shredded monterey jack cheese

1 scallion sliced (I used green onions but you can slice or chop whatever onion you like)

ALTHOUGH THIS IS A DIABETIC RECIPE, PLEASE MAKE IT YOUR OWN. IF NOT DIABETIC AND THE WORD DIABETIC SCARES YOU, AGAIN MAKE IT YOUR OWN. GREAT WAY TO GET YOUR DINNER READY, POP IN FRIDGE IF MAKING AHEAD FOR COOKING THAT NIGHT. CAN ALSO DO IN OVEN BUT WOULD RECOMMEND A COOKIE SHEET UNDER PACKETS

Preheat grill to medium hight heat.

In a medium bowl, combine all ingredients except cheese and scallion.

Make your individual packets up and place one piece of chicken in each packet. If chicken breast if big big, double the packet. (approx. 16 in. x 12 inc.

Place the mixture in bowl on top.

Place foil packets on grill and cook for 15 - 209 minutes or until no longer pink in centre.

Carefully open packets and sprinkle with cheese and scallion.

Serve immediately.


If using your oven bake 350º for 20 to 25 minutes.
