6 boneless, skinless chicken breasts
1 c. flour
1 tsp. kosher salt
½ tsp. freshly ground pepper
2 extra-large eggs
1¼ c. seasoned dry bread crumbs
½ c. freshly grated Parmesan cheese, plus extra for serving
½ c. chopped fresh basil
Unsalted butter
Olive oil for pan

Pound the chicken breasts until they are ¼" thick, using a meat mallet or a rolling pin. Prepare three dishes for dipping: Combine the flour, salt, and pepper on a plate. On another plate, combine the bread crumbs, ½ c. Parmesan and chopped basil. Beat eggs with 1 Tbsp. water in a shallow bowl. Coat chicken breasts on both sides with flour mixture, then dip both sides into egg mixture and dredge both sides in the breadcrumb mixture, pressing lightly. Heat 1 Tbsp. of olive oil and 1 Tbsp. of butter in a large skillet or sauté pan and cook 3 chicken breasts on medium-low heat for 3 minutes on each side or until cooked through. Add more butter and oil and cook the remaining chicken. You can keep the batches of chicken warm on a cookie sheet in a 200º oven.
Sprinkle with grated Parmesan to serve.
