1 lb ground beef
1 egg
1 small purple onion, chopped fine
½ tsp garlic powder
½ tsp black pepper
½ tsp sea salt (optional)
½ cup sliced water chestnuts
½ cup sliced black olives
½ cup chopped mushrooms
1 TBSP small amount lite soy sauce
2 cups cooked brown rice
½ cup chopped celery
½ potato peeler carrots
½ chopped green pepper

Directions:
Directions:
Spray skillet with olive oil if using very low fat ground beef. Brown the ground beef in skillet; drain and set aside. Scramble the egg in small amount of oil and mix in with the ground beef. Add the chopped onion, garlic powder, pepper, salt, water chestnuts, olives, mushrooms, soy sauce and rice and heat all this in the skillet. At the last minute add the celery, carrots and green peppers and heat briefly so that the last veggies remain crunchy. Serve immediately. You can use more or less of any of the vegetable ingredients and soy sauce to suit your taste.
