Whip up night before....bake in 5-7 mins. at 400º Makes about 3 dozen

1 c softened unsalted butter
1 c sugar
2 eggs
1½ tbs amaretto
1½ c almond flour
1 tsp baking powder
½ tsp salt

Confectioners' sugar for rolling & dusting

Beat sugar & butter until creamy; adding eggs, amaretto & almond extract until thoroughly mixed.

Add flours, baking powder & salt, mixing until a dough forms. Dough will be sticky; cover in plastic wrap & chill at least 3 hours.

Preheat oven.

In small bowl, add enough confectioners' sugar to cover the bottom of the bowl, roll the dough into 1 inch balls, rolling the dough in the sugar.

Place cookies 2 inches apart on cookie sheet lined with parchment paper. Bake until lightly browned around the edges, place on wire rack to cool.

Dust with confectioners' sugar when cooled.
