1½ pounds of boneless skinless chicken breasts
1 can whole kernel corn, drained
1 can black beans, rinsed and drained
1 can diced tomatoes and green chilies, undrained
1 jalapeño pepper, seeded and finely chopped
3 tbsp. ground cumin
1 tsp. salt
1 tsp. pepper
Dash of Cayenne Pepper
Dash crushed red pepper flakes
1 package (8 oz) reduced-fat cream cheese, cubed
8 tortillas, warmed
Toppings: Sour cream, shredded cheddar cheese, lettuce

1. Place chicken in a greased slow cooker. In a large bowl, combine corn, beans, tomatoes, jalapeño and seasonings; pour over the chicken. Cover and cook for 4-5 hours, or until tender.

2. Remove chicken, cool slightly. Shred meat with two forks. Return to slow cooker. Stir in cream cheese. Cover and cook 15 minutes to until heated.

3. Spoon chicken onto tortilla and add toppings. Fold sides and ends over filling and roll up.
