5 cups warm water (110º F.)
2 pkg. dry yeast
6 Tbsp. lard
1/4 cup honey
4 cups whole wheat flour
1/2 cup instant potatoes
1/2 cup instant dry milk
1 Tbsp. salt
6 1/2 to 8 cups white flour

Directions:
Directions:
Combine 1/2 cup water and yeast in bowl. Stir to dissolve yeast. Melt lard in 6 quart pan. Add honey and remaining water. Mix wheat flour, instant potatoes, dry milk and salt. Add to pan. Beat until smooth in large bowl. Add yeast and stir. Then add white flour and stir with wooden spoon until dough cleans the pan.

Knead 8 to 10 minutes. Place in greased bowl; turn dough so top is greased. Rise 1 to 1 1/2 hours and punch down. Divide in thirds, cover and let rest 5 minutes. Place in greased coffee cans and brush with fat. Bake at 400º for 50 minutes.
