2 pkg. yeast
3/4 cup warm water
1 1/4 cup buttermilk
4 1/2 to 5 cups flour
1/4 cup shortening
2 Tbsp. sugar
2 tsp. baking powder
2 tsp. salt

Directions:
Directions:
Dissolve yeast in water in mixer bowl. Add buttermilk, 2 1/2 cups flour, shortening, sugar, baking powder, salt; blend 1/2 minute. Beat 2 minutes. Stir in remaining flour. Knead 5 minutes. Roll to 18x9 in ch rectangle. Fill with cinnamon and sugar, if desired. Roll up. Press each end to seal. Fold ends under. Put seam side down in 9x5x3 inch pan (or two 8 1/2 x 4 1/2 x 2 1/2 inches). Brush with butter. Let rise 1 hours (dough 2 inches above pan). Bake at 425º with rack in lowest position 30 to 35 minutes. Brush with butter.

For cheese bread: Omit shortening, add 1 cup shredded sharp natural Cheddar (4 ounces) with second flour addition.
