1 T chili powder
1 1/2 tsp sea salt
1 tsp round cumin
1 tsp ancho chili powder
1/2 tsp smoked paprika
1/2 tsp ground cinnamon
2 lbs lean boneless beef chuck roast
1 medium onion, diced
6 garlic cloves, minced
1 cup beef stock
2 T tomato paste
2 chipotles in adobo, minced
12 flour/corn tortillas

Directions:

In a small bowl, combine the chili powder, salt, cumin, ancho chili powder, smoked paprika, and cinnamon. Rub the seasoning mixture on all sides of the beef.

Place the beef in the slow cooker and top it with the onion and garlic.

In a medium bowl, whisk together the beef stock, tomato paste, and minced chipotle. Pour this mixture over the beef.
Cover and cook on low for 8 hours or on high for 4 1/2 hours.
Shred the meat using two forks and serve the meat in the tortillas with your favorite toppings.

Beef can be improved by taking time to sear or char the meat on all sides before putting it in the slow cooker.

Serve with basmati rice and guacamole.
