Venison Stroganoff Recipe

2 lbs. Venison Steak
1 tsp. Salt
5 tbsp. Flour
4 tbsp. Butter
2 C. Mushrooms- sliced
1 C. Onions- chopped
3 cloves Garlic- minced
2 tbsp. Tomato Paste
2 C. Beef Stock
2 C. Sour Cream
3 tbsp. Cooking Sherry

Directions:
Directions:
Cut venison into 1/4" strips; salt and dust with 2 tablespoons of flour.

In a heated heavy skillet, add 2 tablespoons butter and place steak strips in skillet; browning quickly on all sides.

Add mushroom, onions, and garlic. Cook 3-4 minutes until onions are barely tender. Remove meat and add remaining butter to pan drippings.

Blend in remaining flour, tomato paste, and beef stock. Stir mixture constantly until it thickens. Return meat to skillet.

Stir in sour cream, then stir in sherry and heat briefly.

Serve with rice or noodles.
