2 cups chopped onions
2 garlic cloves, minced
1/2 cup water
1 T ground cumin
1 T ground coriander
1 cup salsa
2 green bell peppers, chopped
2 15-ounce cans black beans ( rinse and drain)
1 28-ounce can whole tomatoes with juice
1 can Ro-tel tomatoes
2 cups frozen corn
Salt to taste
1/4 cup chopped cilantro

Directions:

In covered pot, on fairly high heat, cook onions and garlic in water, stir frequently for 5 minutes. Add cumin and coriander, cook for 1 minute. Stir in salsa and green pepper, simmer for 5 minutes. Add black beans and tomatoes, simmer for 10 minutes. Add corn, simmer for 10 minutes and stir in cilantro.
Serve with rice or quinoa, sour cream and shredded cheese. Corn bread also goes well.
