Marinade:
1/2 cup vegetable oil
1/8 tsp pepper
3 Tbsp red wine vinegar
1 Tbsp Parmesan cheese
2 Green onions, sliced finely
1 tsp basil
1/2 tsp sugar
1/2 tsp dry mustard
1/2 tsp salt

Salad:
2 carrots, sliced finely
15 mediun mushrooms, cut in 1/2 ( I don't put in these as I find they go soft and the texture isn't great)
6 radishes, sliced finely
1/2 medium cucumber, 1/4 first length wise before slicing
Bite size pieces of cauliflower, broccoli (heads and peeled stem pieces), red, orange and yellow peppers cleaned.
1 red onion cut into chunks and separated.

Prepare the vegetables and the marinade separately. Combine into a container that can be shaken and store in the fridge for 24 hours to blend the flavours. Easier to shake than it is to stir. Keep cold. Can double the marinade if lots of veggies are added. Add what you like.
