1 cup chopped dates (Or raisins)
1 tsp Baking soda (for over raisins to plump them)
1 cup of boiling water (to put the Baking soda and Raisins in to plump them)

Cream together before adding flour:
1/4 cup shortening
1 cup sugar
1 Beaten egg
1 tsp vanilla
1/4 tsp salt
1 1/2 cup flour
1 tsp Baking Powder
1/2 cup walnut pieces


ICING:

5 Tbsp Brown sugar
3 Tbsp Butter (or Margarine)
2 Tbsp milk
Coconut (Thicken the 3 above ingredients as they are melted and cooked for about 3 minutes)

Directions:
Directions:
Start with plumping the raisins and set aside for later. Cream together the remainder of the ingredients before adding the flour, baking powder and walnuts. Mix everything together and Bake in a preheated oven at 350º for 1 hour in a 9x9 greased and floured pan. Once cooled add icing.
