1 Young Fryer Rabbit, cut up
½ cup Flour
1½ tsp Kosher Salt
½ tsp Fresh Ground Black Pepper
Butter, oil, or lard
Cayenne Pepper --, to taste

Cream Gravy:
For Each Cup of Gravy Desired: Use 2 Tablespoons of Pan Drippings, 1-½ tablespoons flour, 1 cup sweet milk.

1. Shake moistened rabbit pieces in brown paper bag that contains a mixture of flour and seasonings.

2. Place rabbit in 1/4 inch of fat in heavy cast iron skillet.

3. Brown evenly on all sides and remove to baking dish.

4. Add 1/2 cup hot water, cover and bake at 325 degrees F. for one hour or until tender.

CREAM GRAVY:

Over medium heat: Combine flour and drippings in sauce pan and stir for 2 minutes to remove raw flour taste.

Add sweet milk and stir it into pan with flour mixture. Continue to cook until gravy is thickened to your liking.

Season to taste.

Serve gravy with rabbit as a side dish or pour over meat.
