3/4 cup margarine
1 1/2 cups sugar
3 eggs
2 1/4 cups flour
1/4 tsp. salt
1/4 tsp. soda
3/4 cup buttermilk
Grated rind of 1 lemon
3/4 cup nuts, chopped

Juice of 1 lemon
1/2 cup sugar

Directions:
Directions:
Cream margarine and 1 1/2 cups of sugar; beat in eggs. Stir in the dry ingredients together and add to the creamed mixture alternately with the buttermilk. Mix well. Stir in the grated lemon rind and nuts. Pour into a greased and floured 9x5x3 inch loaf baking dish or pan. Bake at 325º for glass (or 350º for metal) for 1 hour and 15 minutes. Check with cake tester, should come out clean. Cool 15 minutes in the pan. Remove loaf from pan and cool completely on wire rack.

While loaf is cooling, prepare the glaze. Combine lemon juice and 1/2 cup sugar. Let stand to allow sugar to dissolve. Pierce top of cooled loaf in several places after removing it from the pan. Spoon glaze over top. Slice to serve. Yield: 10 to 12 servings.
