2 cups cooked diced potatoes
2 green onions, chopped
¼ cup diced ham (can use up to 1 cup)
6 eggs (or 1 container of egg beaters)
¼ cup milk
½ cup mixed vegetables (optional)
½ cup salad dressing
1 tsp salt
¼ tsp pepper

Directions:
Directions:
Heat oven to 350ºF.
Grease 9" quiche or pie plate.
Place potatoes, onions and ham (and veggies if you are using) into the pie plate.
Whisk together eggs and milk. Add the salad dressing, salt and pepper and whisk until smooth.
Pour mixture over the potatoes.
Sprinkle with paprika.
Bake for 30 minutes or until eggs are set.
