3 large eggs, room temperature
1 cup plus 2 T. sugar
1-3/4 cups flour
1/2 tsp. salt
1/2 tsp. baking powder
1-1/2 tsp. anise extract

Directions:
Directions:
Grease and flour 3 cookie sheets. In large bowl, beat eggs on medium speed till fluffy. Gradually beat in sugar. Continue beating 20 minutes longer. Reduce speed to low and add remaining dry ingredients. Beat for 1 minute. Add anise extract and just beat till blended. Drop by teaspoon on prepared cookie sheets. Let sit uncovered at room temperature for 8 to 12 hours. Bake at 325ºF for 10 minutes till light golden brown. Note: Can substitute 3 teaspoons crushed anise seed for anise extract. Also, VERY IMPORTANT, must make these when the humidity is below 50%.
