4-6 boneless, skinless chicken breast halves (2 lbs)
1 package of stove top stuffing mix (6 oz. - chicken flavor)
1½ cups of water
¼ cup (half stick) butter or margarine
12-18 slices of Oscar Mayer center-cut bacon (regular cut) ~1 package
½ cup finely chopped pecans

1- Mix the stuffing packet with water and butter in a 13x9 inch glass baking pan

2- Wrap each chicken breast with 3 bacon slices

3- Place the chicken over the stuffing mixture in pan

4- Sprinkle the chicken with the pecans

5- Bake in upper third of oven at 375º for 40-45 minutes or until chicken is cooked well.

This is one of our favorite recipes because it is so easy to make and so yummy! It was one of the first recipes I cooked for Sean when we were dating. He was so impressed and didn't realize how easy it was for me to prepare. I usually serve with a side of asparagus topped with bread crumbs because you can bake it in the oven at the same time during the last 15 minutes of bake time. Just put the asparagus in a smaller glass pan, drizzle with olive oil, & sprinkle with bread crumbs. Perfect for a work-night meal.
