6 T. butter, softened
2 cups sugar
8 large eggs, separated
6 T. flour
1/2 tsp. salt
2/3 cup lemon juice
4 tsp. lemon zest
2 cups milk

Directions:
Directions:
Cream butter, gradually add sugar and beat until well blended. Add egg yolks and beat until light and fluffy. Stir in next 4 ingredients, then gradually add milk. Beat egg whites until stiff and carefully fold into batter. Pour into shallow 2 quart baking dish and set in pan of hot water. Bake at 325ºF for 40 minutes. Increase temperature to 350ºF and bake 10 minutes longer. Serve warm or chilled. Makes 8 to 10 servings.

When I was a child, we could buy Lemon and Chocolate Pudding Cake in a box mix. This recipe tastes very similar. Really good!
