1 lb. sage-flavored pork sausage
2 T. finely chopped onion
6 T. flour
4 cups milk
1/2 tsp. poultry seasoning
1/2 tsp. ground nutmeg
1/4 tsp. salt
1/4 tsp. garlic powder (optional)
1/4 tsp. ground sage (optional)
Dash of Worcestershire sauce
Dash of hot pepper sauce

Directions:
Directions:
Crumble sausage into a large frying pan; cook over medium-low heat. Add onion; cook and stir until transparent. Drain, discarding all but 2 tablespoons of drippings. Stir in flour to make a roux; cook over medium-low heat about 6 minutes or until mixture bubbles and turns golden. Slowly add milk stirring constantly to prevent lumps; add seasonings, cook, stirring until thickened. To serve, pour gravy over buttermilk biscuits sliced in half and serve with scrambled eggs. Yield: 4 to 6 servings.
