16 ounces salmon fillet
1 zucchini, sliced vertically
Salt to taste
Pepper to taste
20 cherry tomatoes, halved
3 tablespoons Basil pesto
Olive oil cooking spray

Directions:
Directions:
Preheat oven to 400˚. Spray a baking sheet with cooking spray, lay down zucchini slices. Spray them with cooking spray and sprinkle with salt and pepper. Lay the salmon on the zucchini, and spread the pesto on top of the salmon. Top with tomatoes. Bake for 15-25 minutes or until the fish flakes easily in the thickest part of the fillet.

You don't really need the zucchini but it was part of the recipe and it's good. We both really, really liked this a LOT!
