6 slices bacon
1 onion, sliced thinly
½ green pepper, sliced into strips
2 slightly beaten eggs
Minced garlic
Grated ginger root to taste
2 Tbsps Soy sauce
Garlic salt

Directions:
Directions:
In large heavy skillet, fry 6 slices of bacon until crisp. Crumble bacon into 1 inch pieces and set aside. In a saute pan with a little butter, make little egg crepes and slice into small strips, or you can put the eggs in and let them scramble. Into the hot bacon grease, pour the cooked rice, onion slices, garlic, green pepper, and the two eggs. Add as much grated ginger root as you like. Stir as the ingredients cook. Add the bacon pieces, the soy sauce, and the garlic salt. Taste the mixture until you get it just right-and in the Philippine culture, the more garlic the better . Quantities of ingredients vary according to the amount of rice used.

I learned to make this dish when the family lived in the Philippines. It is delicious, but even better the next day.
