2 tbsp olive oil, divided
4 tsps curry powder, mild
1 tsp ground coriander
½ tsp cumin
2 tbsps ginger root, fresh and finely chopped
2 cloves garlic, finely chopped
1 pound boneless, skinless chicken breasts, cut into 1½ inch cubes
2 large fresh tomatoes, chopped into ½ inch pieces
10 oz fresh spinach, baby leaves
½ tsp sea salt
¼ cup water
2 tbsp cilantro, chopped

Directions:
Directions:
Place 1 tablespoon of oil, curry powder, coriander, cumin, ginger, and garlic in a large non-stick skillet; cook over medium heat, stirring occasionally until toasted and fragrant - about 2 to 3 minutes. Add remaining tablespoon of oil and the chicken to the skillet. Stir to coat the chicken with the spiced oil.

Add tomatoes to the skillet. Cover and cook for 10 minutes. Uncover skillet and stir to combine. Add spinach, cover and cook 5 minutes more. Add salt, water , and cilantro and simmer for another minute.

Serve over rice.
