5 cups seeded watermelon chunks
1½ lbs. ripe tomatoes, cut into cubes
3 tsps. sugar
½ tsp. salt
1 small red onion, quartered and thinly sliced
½ cup red wine vinegar
¼ cup extra virgin olive oil
Cracked pepper to taste

1. Combine melon and tomato in large bowl; sprinkle with sugar and salt, tossing to coat. Let stand 15 minutes.
2. Stir in onion, vinegar, and oil. Cover and chill 2 hours.
3. Sprinkle with cracked pepper before serving, if desired.

This was one of the first 'watermelon salad' recipes. Since then there have been many revisions made to this recipe which we Southerners consider our own. One of the very good additions, though, has been adding Feta. It's wonderful.
